Mergelsø is an unusually beautiful lake, nature and forest property in the middle of Jutland. The land has not been cultivated for decades and wild apple trees stand side by side with Danish apple varieties on the shores of the lake. The lake acts as a buffer against the night frost and the soil still contains nutrient-rich marl deposits from the Ice Age.
This is the basis for Mergelsø Cider:

OUR CIDER
A cider based on apples that ripen early in the autumn. A cider based on apples that ripen late. A cider where we ferment a single or a few varieties together and then a cider where we mix with other fruits from the property – this is how we have chosen to use our resources.
MANUFACTURE
We use classic methods for production. It requires patience! From the pressing in the autumn to the disgorging of the champagne bottles, it takes 7 – 10 months.
